My name is Pat Lafleur. I come from a town in south central Louisiana called Opelousas where the Cajun culture is as thick as a good gumbo roux. The Cajuns are of French Canadian descent and are known for their French Zydeco music and Mardi Gras, but mostly their love of cooking.
I moved to Nebraska in 2009 while still working the oil fields in Mexico. Later the oil field went down and I found myself needing to find a new occupation. Nothing better to do than what you love, so I grabbed my favorite cast iron pot and started Cajun Prairie Food Truck. We travel all over Nebraska bringing the Cornhusker state something rarely found, true authentic Cajun cuisine. Whether it’s a fried boudin ball or the andouille sausage we put in our gumbo and jambalaya, it’s all made from scratch.
